Dave's Ginger Beer Recipe

I added 1kg of ginger root before peeling and a bottle of ginger powder I had.
Also, yeast nutrient and used Gervin GV3 yeast.

Sun 12 Jul 2009 - 1.002 FG ( I think this stopped sometime on Saturday, I noticed a definite lack of gas later on and hardly any all Sunday)
Surprised at how quick it finished. I really wanted to stop this at 1.016.
It tasted dry (girly says sweet as well?!) but not much body.
Have split into 4 1lt bottles, 1 being from the top, 4 being from the bottom:
1 1tsp caster suagr
2 tiny bit of apple juice
3 glug of apple juice + 1/2 tsp sugar
4 big glug of apple juice
Tue 14 Jul 2009 - Drank the dregs of a surplus untouched 5th bottle. Tasted sweet and wasn't too bad. If this was sweet, then I hope the others mellow ;)
Sun 19 Jul 2009 - Had bottle 1. Wasn't bad, had more fizz than I thought. Didn't explode when I took it from the fridge.
Wed 22 Jul 2009 - Had bottle 4. Tasted darker. Not surprising as it was the end of the dj. Still nice and fizzy, and strong!
Fri24 Jul 2009 - all gone! 1 and 2 seemed to be the better tasting, but 3 the most fizzy.
Will make again but with a different apple juice.

Sat Jul 11 2009 - 1.065 SG (too early to test, but what the hell - body is strong of grape juice which is to be expected, not concerned)
Mon Jul 20 2009 - 0.994 FG
I thought it finished fast compared to the kit wine. I didn't even move to secondary.
It tastes like alcoholic grape juice and not wine at all.
Added 1/8 tsp of sodium metasulphite
1/4 tsp of potassium sorbate
pinch of malic acid
tiny squirt of lemonjuice
We will see how it goes in a week!
